Italian Night

Pre-dinner nibbles for the guest while I was taking my time slaving away in the kitchen.

For a party of 6 - I made an Italian Salad, Vegetarian Parmigiana, Piggie's Sauceless Spaghetti and some garlic bread (which I did not make)

Italian Salad

Ingredients Dressing

  • Salad leaves - Garlic
  • Mushrooms - Seeded Mustard
  • Black Olives - Honey
  • Roma Tomatoes - Balsamic Vinegar
  • Fetta Cheese - Olive Oil
  • Cucumber - Mixed Herbs
Directions

- Chop everything and mix it all up!

Vegetarian Parmigiana

Ingredients

  • Eggplant (sliced)
  • Zucchini (sliced)
  • Basil
  • Tomato Sauce (NOT ketchup)
  • Ricotta Cheese
  • Fetta Cheese
  • Parmesan Cheese

Directions

- Grill the vegetables, layer onto baking tray, cover with tomato sauce, sprinkle on cheese - REPEAT for 3 layers, then bake til golden.

Piggie's Sauceless Spaghetti

Ingredients

  • Spaghetti
  • Italian Sausage
  • Prosciutto
  • Anchovies
  • Cherry Tomatoes
  • Lemon
  • Olives
  • Parsley
  • Garlic
  • Onion
  • Chilli

Directions

- Cook the pasta, cook everything in the saucepan, mix and season.

I love cooking food from around the world and testing them out on my unsuspecting friends - who are under the disillusion that I'm a decent cook. Little do they know that I hardly ever read the recipes properly or even bothered to follow them. Most of the time, I don't even taste the dishes before serving them....
